Freeze Dried Goodies
The process of freeze drying is complicated - through freezing at low temperatures, sublimation and a vacuum chamber, excess water is removed from the food where it gathers on the chamber walls. Then the machine will switch to traditional dehydrating at lower temperatures than a normal dehydrator to remove any remaining water in the food. In the end (after 2-4 days), the food has less than 1% of its water remaining, but will have retained 97-99% of its nutritional value. The low temperatures mean that vitamins (particularly vitamin C) have not been denatured, and that food retains its taste. We only run quality food through the machine – if we wouldn’t eat it, we won’t dehydrate it (my pineapple allergy is the only exception so far). Sweet foods will become slightly sweeter, sour foods will stay sour and bitter foods, will become a little more bitter. We have noticed a few anomalies to this – I seem to be able to eat small amounts of pineapple (maybe the enzyme becomes deactivated?) and tomatoes seem to be far less acidic. All of our freeze dried goodies come in mylar bags and are sealed for your protection. In these bags, they should last a few years. When you do open the bag to eat, either eat them all in one sitting, or be sure to properly close the bag right away. As they have no moisture in them – freeze dried goodies will try and “suck” the moisture out of the air until they become less crunchy and more chewy. |
